Easy Mini Empanadas

Today April 8 is National Empanada Day, and what better way is there to celebrate than making fresh, homemade, mini empanadas. Empanadas are made by folding dough around a seasoned filling, then are deep fried in hot oil or baked in the oven. Empanadas are extremely customizable and can be altered to please any person. The filling is usually made from meats, vegetables, cheeses, and sometimes even fruits or seafood. To celebrate National Empanada Day, try making your own empanadas!
